Easy Hungry Jack Casserole

Hungryjack Casserole. My mom started making this when I was in high school, I believe, and it is one of my favorites.  I called her and asked her where she got the recipe. She has no idea so we are going to go with….it came from my great uncle who was always hungry and also was named Jack.  Either way, it’s yummy.

So, go to the store and buy –

2 pounds of ground beef

1 large can (56 ozs) of honey flavored Bush’s baked beans.  (This is the only recipe that I stick to a specific name brand on.)
Or when you start to make it, you can discover that you did not in fact by the honey flavored, oops! It was still good, though!

2 cups cheddar cheese

2 tubes of biscuits like my borrowed from the internet picture here. 😉

Now my Mom makes it without the bbq sauce if you are using the honey baked beans but I still do because I’m convinced it matters. But if you want to make it and are out of bbq sauce, you can live dangerously like my mom and make it anyway!

Brown the beef.

Ta-da!

Mix it with the baked beans in a 9 x 13 dish.

Add about a 1- 1/2 cups of bbq sauce.  You can use a little more or a little less, depending on how much you like the bbq taste. I usually do the smell test. (Does it smell good? Then that’s probably enough bbq sauce.)

Spread cheese on top. It can be more or less than 2 cups depending on how much you like cheese.

Separate the biscuits into tops and bottoms and place them on top of the entire casserole.

 

Cook at 375 degrees for about 30 minutes or until rolls are browned. Or in some cases, you can let it get a little too browned because you got distracted by your kids. The good news is that it will still be good! 😉
